Paleo Pizza w/Fig, Balsamic and Arugula

Ingredients:

• 2 cups almond flour

• 1 cup arrowroot powder

(you can also use tapioca flour)

• 1&1⁄2 tsp. baking powder

• 1&1⁄2 tsp. sea salt

• 1&1⁄2 tsp. dried oregano

• 1&1⁄2 tsp. dried chili pepper flakes

• 1&1⁄2 tsp. dried garlic

• 1&1⁄2 tsp. garlic powder

• 1&1⁄2 tsp. onion powder 

• 1/4 tsp. black peppa

(Basically, SPICE IT UP!!!)

• 3 eggs

• 1⁄2 cup plain almond milk

• fresh mozzarella

• Dried figs, sliced very thinly

• Thinly sliced prosciutto

• Arugula

• Balsamic

What I do!

1. Preheat oven to 425 degrees. Grease a round pizza

2. Combine dry ingredients in a large bowl. Whisk to blend together.

3. Add eggs and almond milk to the dry ingredients. Mix well. (The batter will be like cake batter – not like typical pizza dough.)

4. Use a spatula to spread batter onto greased pan.

5. Bake crust for 10- 12 minutes.

6. Remove crust from oven and top with, fresh Mozzarella, figs, prosciutto, and Arugula

7. Put back into oven and bake for another

10-15 minutes. 

8. Remove Pizza from oven and drizzle with balsamic

**Make sure to bake immediately after spreading in pan, so oil does not separate and cause crust to stick to pan

***Note: the thicker you spread your crust, the longer you will need to bake it the first time.
